  • 750g aubergines
  • Fine salt
  • 4 tbsp olive oil, divided
  • 1 onion, finely diced
  • 2 garlic cloves, sliced
  • 2 x 400g can of chopped tomatoes
  • 150ml red wine
  • A pinch sugar
  • 2 tsp dried oregano
  • 1 bay leaf
  • A handful basil leaves
  • Salt and freshly ground black pepper
  • 200g mozzarella, thinly sliced
  • 125g grated Parmesan, or vegetarian equivalent

Method

  • Step 1

    Cut aubergines into 1cm thin rounds and sprinkle with salt. Leave for 30 minutes before rinsing and patting dry.

  • Step 2

    In a bowl, toss aubergines in 2 tablespoons oil. Place aubergines in crisper basket.

  • Step 3

    Close the lid and move slider to the AIR FRY/COOKER position. Select AIR FRY and set time to 5 minutes and temperature to 200˚C to preheat. Press START/STOP to begin preheating. Once preheated. Place basket in cooking pot. Select AIR FRY and set time to 12 minutes and temperature to 200˚C. Press START/STOP to begin cooking. Once cooked remove and wipe out pot.

  • Step 4

    Make tomato sauce. Select SEAR/SAUTÉ and set temperature to 4. Select START/STOP to preheat the unit for a few minutes. Add 2 tablespoons oil into pot. Heat for 1 minute before adding onions. Cook for 3 minutes, then add garlic, cook for 2-3 minutes until soft, add tomatoes, wine, sugar, oregano, bay and basil leaves. Season to taste. Set temperature to 2 and simmer for 20 minutes until sauce is thick. Select START/STOP to turn off SEAR/SAUTÉ.

  • Step 5

    To start layering into pot; transfer all but a thin layer of sauce into a bowl from pot. Top sauce with a layer of aubergine slices, grated Parmesan and sliced mozzarella. Then repeat the layers with tomato sauce etc. until you run out of aubergines. Finish the top layer with the tomato sauce and grated Parmesan.

  • Step 6

    Close the lid and move slider to COMBI-STEAM position. Select STEAM AIR FRY and set temperature to 180˚C. Set time to 20 minutes. Press START/STOP to begin cooking (the display will show PRE for approximately 11 minutes as it steams, then the timer will start counting down).

  • Step 7

    When cooking is complete, remove pot from unit and allow to cool slightly, serve warm.
