Banana Loaf

Use up leftover Bananas to make this delicious Banana Loaf with Chocolate and Walnuts.

Ingredients

  • 4 Eggs
  • 100g Muscavado Sugar
  • 3 very ripe Bananas, mashed
  • 150 ml Oil (Vegetable or Olive)
  • 275g Self Raising Flour
  • 1 tsp Baking Powder
  • 40g Walnuts, chopped
  • 40g Chocolate, chopped
  • 2 tbsp Demerera Sugar

Method

  • Step 1

    Beat Eggs and Muscavado Sugar in a stand mixer or with a whisk till pale.

  • Step 2

    Add the Bananas and Veg Oil and whisk until combined.

  • Step 3

    Stir in the Flour, Baking Powder, Walnuts and Chocolate.

  • Step 4

    Pour into a loaf tin (1lb) or foil container of the same size.

  • Step 5

    Sprinkle over the Demerera Sugar.

  • Step 6

    Bake at 140C for 35 minutes.
