Creamy Coconut Chicken Curry

This is a luxurious, creamy chicken curry made with coconut cream and yoghurt . It is best served with fresh Chapattis.

Ingredients

  • 2 tbsp Oil
  • 1 Onion, diced
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1 tsp Garam Masala Powder
  • Salt
  • 250g Plum Tomatoes, Pureed (From a tin)
  • 2lb Chicken Breast, cubed
  • 200g Coconut Milk
  • 2 tbsp Natural Yoghurt

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

Method

  • Step 1

    Heat the Ninja Foodi in Saute mode.

  • Step 2

    Add Oil and once hot, add Onion and saute for 10 minutes. You may need to add a couple of tablespoons of water to avoid it catching.

  • Step 3

    Add Garlic and Ginger.

  • Step 4

    Add Turmeric Powder, Red Chilli Powder, Cumin Powder, Coriander Powder, Garam Masala Powder and Salt.

  • Step 5

    Saute for 2 minutes.

  • Step 6

    Switch off saute mode.

  • Step 7

    Stir in Tomatoes.

  • Step 8

    Add Chicken.

  • Step 9

    Close the lid, set the valve to sea and select Manual. Cook on high for 5 minutes.

  • Step 10

    Do a quick release.

  • Step 11

    Stir in the Coconut Milk and Yoghurt and select Saute. Simmer for 2 minutes.

  • Step 12

    Serve hot with Naan.
