Creamy Spinach Risotto

A deliciously creamy vegetarian risotto which is very quick and easy to make – just let your Ninja Foodi Multi-Cooker do all the hard work!

  • 1 onion
  • 1 clove garlic
  • 25g unsalted butter
  • 400g arborio rice
  • 800ml vegetable stock (chicken stock as a non-vegetarian option)
  • 100g spinach, finely chopped
  • 25g vegetarian hard cheese (or parmesan as a non-vegetarian option)
  • To taste pepper
  • To garnish parsley

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Chop the onion and the garlic

  • Step 2

    Switch your Ninja Foodi Multi-Cooker to sauté. Heat the butter and the onion until the onion is translucent. Then add the garlic and cook for another minute

  • Step 3

    Add the arborio rice and cook for about 2-3 minutes

  • Step 4

    Pour in the vegetable stock little by little – stir well after each pour

  • Step 5

    Pop on the pressure lid and pressure cook for 7 minutes

  • Step 6

    Once done, carefully quick release the pressure and remove the pressure cooking lid. Mix the rice well and add some pepper to taste

  • Step 7

    Add the finely chopped spinach and the parmesan and mix well

  • Step 8

    The risotto is ready to serve – garnish with some parsley and cheese
