Fluffy Vegan Pancakes

  • 375ml non-dairy milk
  • 200g gluten free self raising flour
  • 2 tbsp olive oil
  • 2 tbsp coconut sugar
  • A pinch salt
  • 1/2 tsp baking powder
  • 1 zest from orange
  • coconut oil for cooking

  • Step 1

    Combine all of the ingredients in your Ninja blender and blitz to form a smooth batter.

  • Step 2

    Heat a little oil in a non-stick frying pan over a medium temperature. Use a 1/4 cup measure to add some of the batter into the pan. Allow this to cook until bubbles start to appear on the surface, then flip and cook on the other side.

  • Step 3

    Continue this process until all of your pancake mixture is used up, then stack your pancakes with all of your favourite toppings!
