Lemon & Poppy Seed Glazed Muffins

A super quick lemon and poppy seed recipe that can be easily made in the jug of your Ninja Kitchen food processor. Simply throw in all of the ingredients in the jugs and blitz! This is a recipe that is super fun to make with children.

Ingredients

  • 1 medium-sized lemon
  • 100g butter (room temperature)
  • 100g sugar
  • 100g self-raising flour
  • 2 eggs
  • 30g poppy seeds
  • 50g icing sugar
  • 1tbsp lemon juice

Method

  • Step 1

    Begin by preheating the oven at 170°F/340°C.

  • Step 2

    Chop the lemon into small pieces with skin on, make sure to remove the seeds.

  • Step 3

    Using the jug of your Ninja and the stacked blade, add all of the ingredients in the jug and minus the icing sugar and lemon juice as they are for the glaze. Select low for approximately 30-45 seconds to mix all of the ingredients together.

  • Step 4

    Place disposable muffin cases in a muffin tray, and distribute the batter between each of the cases.

  • Step 5

    Place the muffins in the oven and bake for 18-20 minutes.

  • Step 6

    Allow the muffins to cool completely on a wire rack.

  • Step 7

    Once the muffins have cooled, mix the icing sugar along with the lemon juice and pour over the muffins and enjoy.
