Mushroom and Smoked Tofu Skewers with Citrus Aioli

Mushroom and Smoked Tofu Skewers with Citrus Aioli


6 wooden skewers (soaked in water for 10 minutes before using)


For the skewers

  • 300g smoked tofu, patted dry and diced into 2 1/2cm pieces
  • 200g chestnut mushrooms, halved
  • 1 tbsp olive oil
  • 1 tsp caraway seeds
  • 1 tsp dried lovage
  • salt and pepper to taste

For the citrus aioli

  • 120g vegan mayonaise
  • 1 tbsp wholegrain mustard
  • 1 large garlic clove, finely chopped
  • 1 tbsp lemon juice
  • 1.2 tsp pepper

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Put tofu and mushrooms in a large bowl and drizzle with olive oil. Add caraway seeds and lovage, and season with salt and pepper. Toss to coat in the flavours.

  • Step 2

    Insert grill plate in the unit. Place flat plate on top of grill plate so it sits flat and close lid. Select FLAT PLATE, set temperature to 200°C and set time to 10 minutes. Select START/STOP to begin preheating.

  • Step 3

    While unit preheats, prepare skewers by alternating tofu and mushrooms until almost full.

  • Step 4

    When the unit beeps to signify it has preheated, place skewers on the flat plate. Close lid and cook for 5 minutes.

  • Step 5

    While skewers are cooking, mix all the citrus aioli ingredients together in a small bowl.

  • Step 6

    After 5 minutes, use silicone tongs to turn skewers over. Close lid to continue cooking.

  • Step 7

    Once cooking is complete, serve immediately with citrus aioli for dipping.
