Panzanella Salad

Another gorgeous dish to serve at BBQ or buffet. The crispiest croutons made in the Ninja Foodi. You can get this dish ready in under 15 minutes.

Ingredients

  • 300g stale/day old sourdough bread
  • 2 tbsp extra virgin olive oil
  • 350g colourful cherry tomatoes (halved or quartered)
  • 1/4 red onion (finely diced)
  • 75g black olives (halved)
  • 1/2 cucumber (halved and sliced)
  • 1 handful fresh basil leaves
  • 1 tsp anchovies

Method

  • Step 1

    Begin by tearing or cutting the bread into small chunks.

  • Step 2

    Combine with the olive oil and cook in the Ninja Foodi on air crisp mode at 200c for 15 minutes.

  • Step 3

    Check after 10 minutes to ensure they’re not burning.

  • Step 4

    Meanwhile combine the rest of the ingredients in a large bowl.

  • Step 5

    Once the croutons are cooked add to the bowl and combine.

  • Step 6

    Option to serve with an extra drizzle of olive oil. Enjoy!
