Pineapple Mojito

Mojitos are the perfect cooling summer cocktail and can come in many different flavours. If you are a mojito lover try this recipe for a crisp, fruity twist. Try swapping the pineapple for any fruit of your choice, such as raspberries or watermelon.

Utensils required


  • 4 limes
  • 2 tsp sugar
  • Handful mint leaves
  • 200ml white rum
  • 600g pineapple
  • soda water
  • ice

  • Step 1

    Remove the peel from the limes and cut them into quarters

  • Step 2

    Place them in the juicer, using the tamper to push down

  • Step 3

    Muddle the lime juice together with the sugar and mint leaves

  • Step 4

    Now cut the pineapple into once inch chunks, feeding it through the juice

  • Step 5

    Half fill 4 glasses with ice

  • Step 6

    Divide the lime mixture between each glass

  • Step 7

    Place 50ml of rum in each glass

  • Step 8

    Now pour in the pineapple juice

  • Step 9

    Top each glass with soda and stir

  • Step 10

    TIP: serve garnished with pineapple and lime wedges
