Pink Beetroot Waffles

Perfect for an easy breakfast or light lunch. The colour of the beetroot really adds to this delicious waffle mix!

Ingredients

  • 1 cooked beetroot
  • 1/2 cup oats
  • 25g vanilla whey protein
  • 1/4 cup non-dairy milk
  • 2 whole eggs
  • 1 tsp baking powder
  • A pinch salt
  • A dash vanilla extract
  • For greasing coconut oil

Method

  • Step 1

    Add all of the ingredients into your Ninja kitchen blender and blitz everything together until smooth and creamy

  • Step 2

    Preheat your waffle iron and grease with a little coconut oil

  • Step 3

    Once the waffle maker is nice and hot, pour over some of the waffle batter and cook for a few minutes (cooking times can vary depending your waffle maker so check the instructions)

  • Step 4

    Repeat this process for the remaining mixture, then serve with toppings of choice
