Raw Cauliflower Rice Salad with Pear & Mint Dressing

This Raw Cauliflower Rice Salad with Pear and Mint Dressing is a nutritionally dense side dish that’s great served alongside any protein source. Spiced with Moroccan style spices and packed full of flavour it’s bound to be a hit.

Ingredients

  • 120g cauliflower
  • 35g cashews (soaked in water for 1 hr)
  • 35g toasted almonds or walnuts
  • 1 echalion shallot (peeled, cut in half)
  • 10g flat leaf parsley (leaves and stalks)
  • 1 medium carrot (peeled, cut in half widthways)
  • 80g pomegranate seeds
  • 35g sultanas
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 Zest of lemon
  • 1 tbsp lemon juice
  • 1-2 tsp sea salt
  • 1 tbsp extra virgin olive oil

For the pear and mint dressing

  • 60ml cold filtered water
  • 75g cashews (soaked in water for 1 hr)
  • 2 ripe conference pears (peeled, cored, cut into 4)
  • 7g fresh mint leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sea salt
  • 5 Seeds from cardamom pods, ground

Method

  • Step 1

    Cut the cauliflower into small florets then rinse and drain the cashews. Add to the bowl of the food processor with the chopping blade, then install and secure the lid. Use the CHOP function, scraping down the sides between blends, until the cauliflower resembles rice. This will take about 4/5 runs of the programme. Remove the blade carefully then transfer to a medium-sized salad bowl.

  • Step 2

    Place the blade back in then add the toasted nuts with the lid installed and select CHOP. Once the nuts are roughly chopped transfer to the bowl of cauliflower rice.

  • Step 3

    Add the shallot and flat leaf parsley and repeat select HIGH. Repeat until finely chopped. Transfer to the salad.

  • Step 4

    Remove the chopping blade and replace with the the reversible grating disc, grating side up. Install the feed chute and lid then place the carrot in the feed chute. Select DISC, then use the pusher to push the carrot through the chute. Carefully remove the lid and grating disc and add the carrot to the salad.

  • Step 5

    Stir together with the remaining salad ingredients then set to one side.

  • Step 6

    Place all of the ingredients for the pear dressing into the Ninja Cup then carefully secure the lid and select BLEND. Carefully remove the blade then plate up the salad and pour over the dressing.
